Nacho Potato Soup

1 pkg (5 1/4 oz) Au Gratin Potatoes
1 can (11 oz) whole kernel corn, drained
1 can (10 oz) Rotel tomatoes
2 cups water
2 cups milk
2 cups Velvettta, cubed

In a 3 qt saucepan, combine the contents of the potatoes, corn, tomatoes, and water. Mix well., Bring to a boil. Reduceheat, cover and simmer for 15-18 minutes or until potatoes are tender. Add milk and cheese. Cook and stir until the cheese is melted. Serves 6-8.

Now I know it isn't just me that likes this one; we make the same one! I love the convenience of the potato mix; and I also like it when we used to go camping in the winter for the same reason.

I've actually made it (since it is such an easy recipe;I just love easy ones! LOL) and put it in the refrigerator for those middle of the night hungries. At night when it is cold here even in the summer it is a nice thing to heat a cupful in the micro and sit out on the deck and enjoy it.

I measure my soup to fit into my thermos. Then I freeze them. On days when I want soup at school, I heat the frozen soup up and pour it in my thermos. Works nice when I am in a rush.
