Cajun Gumbo

1 cup quick cooking rice
1 cup chopped onion
2 T butter
4 t flour
1 (14 oz) can Cajun-style or Mexican style stewed tomatoes
3/4 cup vegetable juice
1/2 or a 16-oz package of frozen cut okra
4 oz peeled deveined shrimp
1 (8 oz) pkg cook ham, cubed (1 1/2 cup)

Prepare rice according to directions. Meanwhile, in large saucepan cook onion in butter until tender, but not brown. Stir in flour to make roux. Add undrained tomatoes and vegetable juice. Cook and stir until thick and bubbly. Stir in frozen okra and shrimp. Bring to boiling. Reduce heat and simmer covered about 3 minutes or until shrimp turns opaque. Stir occaisionally. Stir in ham and heat. Serve in bowls topped with some of the rice.

Will print this one out and keep it for this fall; I love soups in the fall and especially ones with rice in them as it seems to help hold the heat in. So good when we've been outside in the cold!

Cat, I don't know how spicy you like your food, but I add some Louisiana Hot Sauce to mine!

I'm okay with some hot, but DH loves his food real hot! I buy a hot sauce in Walmart that is sold in the Chnese food section; it has a green cap on it and the bottle (plastic) is clear and it is so hot I can only put 1 tiny,tiny piece on my tongue and that 's it for me!

Hummm....I wonder if it has any wassabi in it? A tin bit of that goes a long way. I like my food very spicy too. I don't care for Tabasco because I think it is too vinegary. I personally like Louisiana Hot Sauce!

I went and got the bottle..... it doesn't have that in it; it is called Sriracha HOT Chili Sauce;really can''t see what the heck makes it so hot! LOL
