I need idea's or recipes for whole meals to fix in a electric skillet as we've move in the trailer but don't have the mian stove up here yet.Right now my other ways of cooking is mircowave,slowcooker or eletric skillet.It may be a couple of weeks before the stove is even hook-up when we do get it move .Any help or adivce is welcome,Thanks!

I assume your skillet has a lid? Do you like fish? If yes to both try the following. (Use thick pieces of fish not fillets)

SHALLOW-POACHED SEA BASS

6 oz. chicken stock
1 bay leaf
1 teaspoon Old Bay seasoning
½ teaspoon mustard seeds
1 teaspoon coriander seeds
½ teaspoon McCormick lemon-pepper seasoning
1 teaspoon paprika
Juice and zest from half a lemon
Salt, black pepper and cayenne pepper to taste
1 lb sea bass

Combine all the ingredients for the poaching liquid in a straight sided skillet, (known as a sautoir), with a lid. Bring the liquid to about 175-180 degrees. Add the fish and leave the lid slightly askew for some evaporation. Cook the fish until an instant read thermometer registers 140 degrees, turning it once halfway through the cooking. I like to also spoon some of the liquid over the top of it as it cooks. Depending on the thickness of the fish this may take as much as ten minutes. You probably won’t need to reduce the liquid. Strain the liquid and pour it over the fish before service.

Thanks Chef Mark!Yes my skillet has a lid that has a vent hole in it.Ds & I both like fish on the other hand dh & dd not to much.

Sweetnell, I have several electric skillet recipes that I use it for; I have to go get an oil change inthe expedetion in a bit so will get back here later with them. One of the biggest things to figure out is the temperature to cook things on. Put water in it and play with the temperature controls so you will find at what temperature the skillet you have simmers, boils and etc. That will help you a lot with using lots of your regular recipes right in your electric skillet. They are really great for one dish meals too! If you use any "helper" box mixes they are good in it.

Years ago when the lady that moved in next to us back in the city used nothing but electric skillet and crockpots to do all her cooking in. They didn't have a stove for about a year.

If you will be grilling outside any till you get your stove the elecetric skillet will come in handy also as you can plug it in right out on your porch and use it for your side dishes too.

Thanks Cat!Right now we can't grill outside as we have a burn ban on.Dh hopes to get the icebox & stove moved today but he will still need to run a line for the stove hook-up so that may take a while longer.Still over all its nice to be uptown.

1) If your family likes meatloaf; fix your regular meatloaf recipe, but shape it into small patties and cook in the electric skillet about 30 minutes or so or till done as you desire. You can put some potatoes, and carrots in a crockpot with some tomato sauce on them and just a tiny bit of water in the bottom, then a tossed salad on the side and you have a complete meal.

2) Chili Mac

1 lb ground beef
1 cup chopped onion
3/4 cup chopped green pepper
1 16 oz can tomato bits
1 15 oz can kidney beans, undrained
1 8 oz can tomato sauce
1/2 cup water
2 tsp chili powder
1 bay leaf
1 cup uncooked elbow macaroni

In your electric skillet cook the meat, onion, green pepper till the meat is browned and the vegetables are tender; I use 350 degree temp. Drain off fat. Stir in remaining ingredients EXCEPT the macaroni and bring to a boil then add macaroni. Cover and reduce temp to 220 degrees ( or whatever your skillets simmer temp is) and simmer stirring frequently till the macaroni is cooked about 10 to 15 minutes. Remove the bay leaf and serve. Makes 6 serving

3) Skillet Hamburger Pie

1 1/2 lb ground beef
1/2 cup chopped celery
1/2 cup chopped onion
1 tsp worcestershire sauce
1/2 tsp pepper
1 15 oz can cut green beans, drained
1 10 3/4 oz can beef gravy
instant mashed potato flakes for 6 servings
1/2 cup sour cream
1 tbsp chopped chives
paprika
1/2 cup shredded cheddar cheese

In electric skillet cook beef, celery and onion till meat is browned and vegetables are crisp tender. (I use 350 degrees). Stir in worcestershire, pepper beans, gravy, and 1/2 cup water. Reduce heat to 220 degrees and simmer to blend flavors. Prepare potatoes and 2 cups boiling water and add sour cream, and chives. Spoon into mounds on top of meat. Sprinkle with paparika and cheese; cover and heat till cheese melts. Seves 6

4) Skillet Breakfast Pie (Good for any meal)

4 slices bacon
1 12 oz pkg frozen hash brown potatoes
4 eggs

In electric skillet cook the bacon till crisp using 350 degrees. Remove bacon and cook potatoes in the drippings till browned. Season with salt and pepper. Put bacon across potatoes to divide into 4 portions. Break an egg into each portion. Reduce heat to 220 degrees, cover and cook eggs till set about 10 minutes. Makes 2 large servings or 4 smaller servings

5) Pancakes are good in the electric skillet; have some spplesauce or favorite fruit chilled on the side

6) Heat up soups, canned chili, etc; griled cheese sandwiches, egg sandwiches, hot ham and cheese sandwiches, chips or potato salad on the side, pickles, etc, cut up fresh veggies and dip

7) Your favorite scalloped potato and ham recipes cooks well in the electric skillet


Hope some of this helps or gives you some ideas. I'll post a few more of my recipes I like in the electric skillet tomorrow

Pork Chops and Rice

4 pork chops about 3/4" thick
1 tbsp olive oil
1 cup long grain rice
1 small onion, chopped
1 small green pepper, cut into strips
1 1/2 cups water
1 7 1/2 oz can tomatoes, cut up
1 tbsp instant chicken bouillon granules
1/2 tsp ground sage
1/4 tsp dried rosemary, crushed
1/2 tsp pepper
1 8 oz can diced carrots, drained

Trim fat from pork chops. Brown the chops in electric skillet on both sides in hot olive oil. Remove chops from skillet and sprinkle chops with salt. In the skillet combine uncooked rice, onion, and green pepper and add water, undrained tomatoes, bouillon granules, sage, rosemary, and pepper. Put chops on top of rice mixture. Cover and simmer 20 minutes or till rice is tender. Spoon carrots around the chops, cover and simmer just till carrots are heated through. 4 servings

(This is good with chicken also)

Electric Skillet Potato Salad

2 slices bacon
12 oz fully cooked smoked sausage, sliced into rounds
1 medium onion, chopped
1 10 3/4 oz can condensed cream of celery soup
1/4 cup water
2 tbsp sweet pickle relish
2 tbsp vinegar
1/8 tsp salt
1 16 oz pkg. frozen french fried potatoes, halved crosswise

In electric skillet cook bacon till crisp and set aside. Reserve drippings in the skillet and cook sausage and onion in drippings till meat is browned and onion is tender. Stir in soup, water, pickle relish, vinegar, and salt and bring to a boil. Add potatoes and cook covered about 10 minutes, stir once or twice while cooking. To serve crumble the bacon over the potato salad. Serves 4

This is good as a hot dish to serve with sandwiches and an even serve as a meal in itself

Veggie Mac and Cheese


2 cups diced zucchini
1/2 cup chopped onion
1/2 tsp dried basil
1 tbsp margarine
1 can (11 oz) condensed cheddar cheese soup
3 cups cooked elbow macaroni (cook this in electric skillet, drain and set aside)
2 cups shredded sharp cheddar cheese
1 can (15 oz) tomatoes, chopped and well drained
1/2 tsp prepared mustard

In electric skillet cook zucchini and onion with the basil in kargarine till tender. Add remaining ingredients and heat till cheese is melted, stir occasionally. Makes about 5 1/2 cups

You can make stir fries and Frajitas.

Make a sloppy joe mix and serve on hamburger buns.

Any of your casseroles that you make in the oven can be cooked in an electric skillet too.

If your skillet is square. You can bake a cake also. Either by baking in the skillet itself or using an 8" x 8" square pan with a few canning jar rings set under the cake pan. Using this method you can also bake bisquits and some breads. You will need to monitor the temperature of the skillet.

Make Chili in your crockpot and bake corn bread in your electric skillet.

Or make potpies in your skillet. Try baking some cookies in your 8 x 8 inch pan with the lid over the top.

Hope this gave you some ideas.

Chicken Dish

3 chicken breast OR 2 12 oz cans chunk chicken drained
1 can cream of mushroom soup
1 can chicken rice soup
1 small can chow mein noodles
1 can sliced water chestnuts, drained
1 cup chopped green pepper

Mix all the ingredients in an electric skillet and cook covered at 350 degrees about 30 minutes. Just before serving top with slivered almonds.

Tamale Casserole

2 tbsp olive oil
1 onion, finely chopped
1 15 oz can tamales in chili gravy
1 8 oz can cream style corn
1/2 cup sliced green pepper
1/2 cup ripe olives, sliced
1/2 cup beef bouillon
2 tsp chili powder
pinch cayenne pepper
1 cup grated cheddar cheese

Heat oil in the electric skillet and cook onion till golden. Remove wrapping from the tamales and put them on top of the cooked onion. Add remaining ingredients and bake at 325 degrees for 30 minutes. Makes 4 servings

Steak Skillet Supper

1 pound beef round steak cut into thin strips
1 tbsp olive oil
1 10 1/2 oz can mushroom gravy
1/2 cup water
1/2 envelope spaghetti sauce mix with mushrooms (2 tbsp)


3 tp 4 medium zucchini, cut in 1 1/2" slices
Hot cooked rice

In electric skillet quickly brown the round steak strips in hot oil. Add mushrooms\ gravy,water, and spaghetti sauce mix and stir till combined. COver and cook over low heat about 20 minutes, stirring occasionally. Add zucchini slices. Cover and continue till zucchini is crisp tender, 10 to 12 minutes. Serve zucchini mixture over hot rice. Serves 4

Here is one that my family really likes: Beef Paysanne (http://www.familycorner.com/forums/showthread.php3?p=598598#post598598). You can make rice in your microwave to serve with this. Use any beef roast that you slow-cooked for a different meal.

Another easy skillet meal is Taco Skillet (http://www.momsmenu.com/forums/showthread.php?p=19144).

And don't forget about Fried Rice!

I survived without a kitchen for a few weeks on a microwave, electric skillet, slow cooker and a camping stove. If you have, or can borrow, a Coleman stove, even that one burner will help a lot.

Frank and Noodle Supper


6 frankfurters
3 cups uncooked medium noodles
1- 28 oz can tomatoes, cut up
1 cup chopped celery
1- 1 1/2 oz envelope spaghetti sauce mix
1 tsp sugar
1/2 cup shredded sharp process american cheese

Cut franks diagonally into thirds and place in the electric skillet. Add noodles, tomatoes, celery, spaghetti sauce mix, sugar, and 1/2 cup water. Stir to moisten noodles. Cover and cook on low stirring often till noodles are done, about 15 minutes or so. Sprinkle the cheese over the top. 6 servings

You could make French toast and eggs in your electric skillet.

Pancakes and sausages

Fry hamburger patties and if you have a deep fryer make French fries.

You can also fry the hamburgers and make gravy to cover the patties for Salisbury steaks. Make baked potatoes in your microwave with some steamed vegetables.

Make Spagetti in the Crockpot and the sauce in the Electric skillet. With Garlic bread in your Microwave.

Thanks everyone!I do have my regular cookstove now but am enjoying using my eletric skillet also for a change with all the yummy recipes & suggestions you all have given me.I had forgotten how nice it is to have an eletric skillet.

German Supper


2 cups applesauce
1 - 14 oz can sauerkraut, drained & snipped
1/3 cup dry white wine ( can use apple juice)
2 tbsp packed brown sugar
12 oz Polish sausage
1 16 oz can whole onions, drained
1 16 oz can whole potatoes, drained

In electric skillet combine the first 4 ingredients. Add remaining ingredients and simmer uncovered about 20 minutes, stirring occasionally. Arrange sauerkraut mixture on a platter with the onions and potatoes in a ring around the sausage. Garnish with snipped parsley. 4 servings

1 - 15 1/2 oz can butter beans
1 - 15 1/2 oz can pork and beans in tomato sauce
1/2 cup ketchup
1/4 cup packed brown sugar
1 tbsp instant minced onion
1 tsp dry mustard
1/2 tsp worcestershire sauce
1/8 tsp garlic powder
**********************************
1/2 pound frankfurters cut into 1" pieces

In a electric skillet combine kidney beans, undrained butter beans, pork and beans in tomato sauce, ketchup, brown sugar, instant minced onion, dry mustard, worcestershire sauce, and garlic powder. Simmer, uncovered for 10 minutes. Add frankfurter pieces and heat through. Makes 6 servings.

Did you know you can bake in an electric skillet? Sure makes it less hot than using the big oven! Here is how to bake a cake using an electric skillet



Cover the electric skillet and close the lid vent. Preheat to 280 degrees. This will take about 4 1/2 minutes. When it is preheated grease it well with shortening and flour the pan. Add prepared cake batter, cover and bake till the top of the cake is moist but not sticky about 35 minutes. Open the lid vent the last 5 minutes of baking time. Loosen the cake around the edges with a spatula. Invert onto a cake rack and let stand a few minutes on the rack before removing the electric skillet. Cool. Cakes can be cut in half and iced as layers or cut into squares .


To bake packaged cake mixes just mix it as directed on the package and bake as above.

Baked Apples


6 apples
1/2 cup granulated sugar
3 tbsp brown sugar
1/2 cup water
1 tbsp margarine
cinnamon

Wash apples, core, peel 1/3 way down from the stem end. Arrange in electric skillet and combine sugars and water. Pour over apples. Add margarine. Sprinkle the apples with cinnamon. Set dail to 320 degrees. When syrup boils cover the skillet, open the vent and reduce heat to a simmering point. Bake about 30 minutes or till apples are tender. Baste with the syrup.

Coffeecake

BATTER:
1 pkg yellow cake mix

TOPPING:

1/2 cup brown sugar,packed
4 tbsp fine graham cracker crumbs
1 tbsp grated orange rind
1/2 cup coarsely chopped nuts
tbsp melted margarine
1 1/2 tsp cinnamon

Combine topping ingredients in a bowl and beat on low speed till blended. Nuts can be sprinkled on top. Prepare cake mix as directed on label, but add 1 tbsp grated orange rind. Bake at 280 degrees about 30 minutes or till top is moist but not sticky. When baked, uncover and quickly sprinkle topping evenly over the cake. Cover and trun dial to "OFF". Let stand 10 more minutes before cutting. Uncover and cut into squares and serve warm directly from the electric skillet. Makes 16 servings

Baking Powder Biscuits



Fit 4 layers of heavy duty foil in the bottom of the electric skillet. Preheat to 360 degrees till the light goes out. Put your own recipe or ready to bake biscuits directly on the foil, cover and bake 8 minutes. Uncover and turn biscuits, cover and open lid vent. Bake about 6 minutes more. Serve immediately.

Baked Macaroni and Cheese

7 oz elbow macaroni
3 tbsp margarine
1/2 cup fine fresh bread crumbs
1 tbsp grated onion
1 tbsp flour
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dry mustard
2 cups milk
1/2 pound sharp american cheese, grated
paprika

Cook macaroni as directed on pkg and drain. Preheat electric skillet to 300 degrees. Melt 2 tbsp margarine, add crumbs, brown stirring. Remove, Add remaining margarine and onion and saute at 240 degrees. Blend in flour, salt, pepper and mustard. Gradually add milk stirring till smooth. Stir in 3/4 of the cheese. Turn heat control to "OFF". Fold in drained macaroni and mix lightly with a fork. Top with remaining cheese and crumbs. Sprinkle with paprika. Cover and open lid vent. Bake at simmering point till bubbly and hot. Serve directly from electric skillet. Serves 4 to 6

Baked Bean Casserole

4 to 6 slices bacon
1 tbsp grated onion
2 - 15 oz cans pork and beans
3/4 tsp dry mustard
1/4 cup maple syrup
2 tbsp ketchup

Put bacon in cold electric skillet. Set dial at 320 degrees. Fry till beginning to get crisp. Remove and pour off all but 2 tbsp fat, add onion, and saute at 240 degrees, then remaining ingredients, except bacon. Stir to blend. Lay bacon on top. Cover and open lid vent. Simmer till bubbly Serves 4 to 6

Another recipe that you can make without heating up the kitchen this summer!

Pizza Cooked in an Electric Skillet

Prepare your favorite pizza dough and put it in the center of a well greased cold electric skillet. Grease fingers and press the dough to cover the entire surface. Pinch up the outside edge to hold sauce. Add sauce and top with all your favorite pizza toppings. Cover and bake at 300 degrees about 20 minutes or till the dough is set with the lid vent open. Slide out with a turner. Cut into squares and serve hot.

Easy Skillet Supper


1/2 pound lean ground beef
1 onion, chopped
1 cup dry macaroni
2 1/2 cups tomato juice
1/2 tsp pepper
1/2 tsp chili powder
1 tsp oregano, chopped
1 15 1/2 oz can chili beans
1 cup low fat grated cheddar cheese

Brown ground beef in an electric skillet and drain any fat. Add onion and cook till transulcent. Turn heat down to simmer and add macaroni, juice, spices, and beans and stir to combine. Simmer covered for 20 minutes. If you uncover more than twice to stir add additional tomato juice. Remove from heat, stir and sprinkle cheese on top. 6 servings

Glad you wil enjoy them, be sure and print them out though as I'm not sure what is going to happen with MM yet. I have a cookbook now of MM recipes!

My DIL wanted an electric skillet so I bought her one and gave her a printed copy of all these electric skillet recipes also, Not sure if she hass used them yet, but at least she has them if she wants to try them. I have even pulled mine out of the appliance closet!
