1/2 cup uncooked wild rice
1 lb lean ground beef
1 can (14 1/2 oz) chicken broth
1 can ( 10 3/4 oz) 98% fat free cream of mushroom soup
2 cups milk
1 cup shredded cheddar cheese
13 cup shredded carrot
1 pkg. (.4 oz) buttermilk original ranch salad dressing mix
chopped green onions, (green & white portions)

Cook rice according to pkg. directions to make about 1 1/2 cups cooked rice. In a dutch oven brown beef and drain off fat. Stir in rice, chicken broth, cream of mushroom soup, milk, cheese, carrot and dry salad dressing. Heat to a simmer over low heat stirring occasionally about 15 minutes. Serve topped with green onions. Makes 6 to 8 servings
