serving for 2
2 green onions sliced
1 garlic clove minced
2 tsp olive oil
12 oz sea scallops
2 tsp minced fresh parsley
1 tsp finely chopped fresh basil
1/4 cup chicken broth
1/8 tsp salt
1/8 tsp pepper
1/3 cup soft bread crumbs
2 tsp butter
In a nonstick skillet, saute the onions and garlic in oil until tender. Add the scallops, parsley and basil. Cook and stir over medium high heat until scallops are firm and opaque. Add the chicken broth, salt and pepper. Cook uncovered for 1 minute. Put in casserole dish. Sprinkle bread crumbs and dot with butter. Broil in oven till crumbs are golden 4 to 6 min.
I put it over longgrain rice.
