Bennigan's Ultimate Bake Potato Soup
3 lbs potatoes, washed, scrubbed, and pierced in several places
1 T butter
1 1/2 cups finely chopped onions
2 T minced garlic
1 (14 oz) can chicken broth
3 cups milk
salt and pepper to taste
Heat oven to 400 degrees. Bake potatoes until tender, about 1 hour. Peel when cool enough to handle. Meanwhile, melt butter in a large soup pot over medium-low heat. Stir in onions and garlic. Cover and cook 10 minutes until soft, but not brown. Add 2/3 of the potatoes and mash with a potato masher. Add broth, seasonings, and milk. Bring to a simmer, stirring occaisionally. Cut remaining potatoes in small cubes and add to soup and stir to reheat. Sprinkle each with desired toppings.

Shredded Colby cheese
crumbled cooked bacon
Chopped scallions
