When a recipe calls for cubed cooked chicken you can plan for one 3 to 4 pound fryer to get about 3 to 4 cups and two whole chicken breast ( 1 1/2 pounds with skin & bone) OR 3/4 pound chicken breast (skinned & boned) to give you about 2 cups

I buy the biggest roasting chickens I can find, and save one of the chicken breasts for another dinner. Since the chicken is so big, I get about 2 cups of cooked chicken from one chicken breast.

If I am going to roast a chicken, I want that chicken to be worth my while! So I buy the biggest Perdue Oven Stuffer that I can find in the store. It's no more trouble to roast an 8-pound chicken than a 5-pound one--but you get WAY more leftovers. And there are so many ways to use that extra meat.

Buying a whole chicken is so economical, as long as you don't mind the trouble of cutting it up. For starters, I think the indiviual parts will be fresher and taste better, freshly cut from a whole bird than sold individually. But in terms of the econimics, the whole birds are almost always cheaper than buying the individual parts. Plus, you can save the neck, wing tips, and back bone to make stock. Everytime I break down a chicken I throw these pieces in a bag in the freezer. Store enough of them up and when you want to make stock, you don't need to buy any chicken.
