French Onion Soup

2 T butter
2 cups thinly sliced onions
4 cups beef stock
2 T dry sherry or dry wine
1 t Worcerstershire sauce
pepper and salt to taste
6 slices French bread, toasted
3/4 cup Swiss cheese, shredded

In a large saucepan, melt butter. Stir in onions. Cook covered. over medium heat for 8-10 minutes or until tender and golden--or carmelized, stirring occaisionally. Stir in beef stock, shrry or wine, worcerstireshire sauce, and seasoning. Bring to a boil, then reduce heat. Cover and simmer for 10 minutes. Pour into ramkins or bowls. Sprinkle toasted bread with cheese. Place on top of soup. Place in toaster oven until cheese melts an turns brown.

I love French Onion Soup especially homemade, and as many onions that we eat this is one soup that gets me! I can't eat it unless I'm staying home! LOL

Do you usually top yours with French bread too?

I like it topped with French bread sprinkled with Gueyre cheese and broiled just slightly!

Me too, except there are several cheeses that I like.

I like to use beef consomme and add some cabbage and spices. If I have time I will caramelize the onions in a crockpot or on the stove first to sweeten them up. This is the soup I use when I am down with a cold.

What cheeses do you like DeBora? I'd like to find one that when it melts it doesn't get so stringy that I almost choke on it.
