8 medium potatoes, peeled & sliced into 1/4" slices
2 cups ham cut into bite size pieces
2 cups shredded cheese of your choice
SAUCE
2 tbsp margarine
2 tbsp flour
2 cups milk
1 can 98% reduced fat cream of mushroom soup
1 cup fat free sour cream
1/4 tsp salt
1/2 tsp pepper
Preheat oven to 350 degrees. Bring a pot of water to a boil and cook potatoes in boiling water for 3 minutes. Drain and let cool. While potatoes are cooking prepare the sauce. In a saucepan melt the margarine on medium heat. Add flour, cook and stir 1 minute. Add milk and stir and cook till sauce begins to thicken. Add mushroom soup and stir till no lumps remain. Remove from the heat. Stir in the sour cream, salt and pepper. Butter a 9 x 13" casserole. Layer 1/2 potatoes, 1 cup ham, 1/2 sauce and 1 cup cheese. Repeat once more. Bake uncovered at 350 degrees about 35 minutes or till bubbly and lightly browned. Serves 6
