4 spinach leaves
6 steamer clams. scrubbed
6 mussels, debearded and scrubbed
3 whole scallions
2 small russet potatoes, halved
1 ear of corn, husked and broken into thirds
1 live lobster (1 1/4 lb)
rosemary or thyme sprigs
1/4 cup clam broth
melted butter
lemon wedges

Get coals ready and have them at about 350 degrees where you are going to cook over them. Put a 24" piece of heavy duty foil doubled on a flat surface. Put spinach leaves in center. Top with clams and mussels. Using a sharp knife and a cutting board quickly sever the vein at the base of the lobster's neck. Put lobster on top of clams and mussels and pull up sides of foil. Add herb sprigs. Drizzle clam broth over seafood and the vegetables. Close the foil and secure tightly. Place on a wire rack over coals and bake about 1 hour. Put foil packet when done on a large platter and cut open at the table. Serve with the melted butter and lemon juice.

This can be baked in the oven at home in a 350 degree oven and cook the foil packet on a baking sheet in the oven.
