On wintery, cold days .. nothing is better to warm you up. SERVES 3
2 med russet potatoes, diced
1 can vegetable broth
1/2 cup shredded carrot
2 tbl chopped white onion
Combine and boil until potatoes are softened. Stir with fork until at least 1/2 of the potatoes are smashed.
Add:
1 small can evaporated milk
1/2 cup shredded cheddar
2 tbl butter
1/2 tsp black pepper
Mix and stir until cheese and butter are melted and all is heated through.
Serve in soup cups with small amount of shredded cheese and bacon crumbles on top ... with hot baked rolls.
