It doesn't get that cold here, compared to everywhere else. But, I am so cold-natured that even when the temps are in the 50s, I like something warm and when I am stressed (which is all the time now) I want it comforting too.

I like a cup of spicy ramen noodles as it is quick and easy on cold days.

I also like chili and cornbrean or pinto beans and cornbread.

If I am not in a hurry, I like chicken and dumplings.

I also like chili when it's cold outside. My favorite way to eat it is with chips and cheese, but it's also really good over a baked potato. Here's the recipe I use:

Copycat Wendy's Chili

2 pounds ground beef, browned and drained*
1 can tomato sauce, 29 ounces
2 cans kidney beans, 15 ounces
2 cans pinto beans, 15 ounces
1 onion, diced
2 tbl sliced jalapenos (I buy them by the jar)
1 stalk celery, diced
1 can diced tomatoes (with juice), 15 ounces, or 2 or 3 fresh tomatoes, diced
2 teaspoons cumin
3 tablespoons chili powder
1 1/2 teaspoons pepper
2 cups water

Drain and rinse beans. Combine all ingredients in stockpot or roaster oven. Simmer at least 3 hours, stirring occasionally.

*You can also use leftover cooked pot roast or leftover cooked hamburgers in place of the ground beef. Grilled hamburgers, cubed up, give a nice smoky taste to the chili.

1lb beef
1 can condenced mushroom soup
1/2 can water
1 tblsp beef powder
1tsp corn starch

2. While the noodles are cooking:
1st Saute the mushrooms with 1/2 tsp garlic powder and 1 tbsp margarine untill cooked and remove mushrooms from fry pan.
2nd Season the beef with seasoning salt and brown it well. Remove any excess fat from the frying pan. Add onion and celery continue cooking till onion is clear.
3rd Add mushrooms and mushroom soup, bring to a boil
4th In 1/2 can water mix corn starch and beef powder and slowly add to boiling fry pan cooking till thick. Remove pan from heat.
Place noodles on plates and heap sauce on top of them.
