View Full Version : Salmon with Carrots & Caramelized Onions

2 tbsp olive oil
2 tbsp butter
4 onions, chopped into large pieces
16 oz baby carrots
4 cloves garlic, minced
1 1/2 pound salmon filet
1/2 tsp salt
1/8 tsp pepper
1/2 tsp dried dill weed

Put olive oil and butter in a 4 quart crockpot. Add onions, baby carrots, and garlic, stir and cover and cook on low for 6 to 7 hours stirring once during cooking time till vegetables are beginning to caramelize. Put salmon over vegetables in crockpot and sprinkle with salt, pepper, and dill weed. Cover and cook on low for 1 to 2 hours till the salmon flakes when tested with a fork. Place salmon on serving plate and top with onion mixture. Serves 4

Mmmm... sounds good.
I think I'll try it with the haddock I have in my freezer.

I'm sure it would taste equally good with any fish. Hope you enjoy it!
