2 slices unpeeled eggplant, about 3/4" thick
4 slices tomato, about 1/2" thick
4 thin slices onion
2 thin slices cheddar cheese
sliced cooked chicken
2 slices bacon
Put the eggplant slices in greased shallow baking dish. Sprinkle with salt. Top each with 2 slices tomato, 2 slices onion, 1 slice cheese, 1 serving sliced chicken, and 1 slice bacon, cut in half. Put into a 350 degree oven about 40 minutes or till bacon is cooked. Serves 2
