1/4 cup sifted flour
1 tsp baking powder
1 1/2 tsp salt
2 cups cold mashed potatoes
1 egg, slightly beaten
2 tbsp light cream
1 tbsp grated onion
1/4 cup melted butter
Sift first 3 ingredients together. Combine potatoes, egg, cream, and onion and mix well. Blend in dry ingredients. Add butter and mix well. Knead for 30 seconds. Roll 1/2" thick on a floured surface. Cut in squares or cut with a round cutter. Bake on hot greased griddle about 5 minutes on each side. Serves 4
