2 medium potatoes
1 medium onion
2 tbsp margarine
1 tbsp flour
1 1/2 cups milk
1 tbsp parsley, snipped
salt, pepper, celery salt
Cook pared potatoes and peeled onion together in enough water to cover till vegetables are tender. Drain and reserve 1/2 cup of the liquid. Force vegetables through a food mill and add reserved liquid. Melt margarine in a saucepan over medium heat and stir in flour and cook till bubbly. Slowly add the milk and cook, stirring constantly till boiling. Cook 1 or 2 minutes longer and combine with the potato onion mixture. Add parsley and season to taste. Heat to serving temperature and serve with toasted croutons. Serves 2
