2 15 oz cans butterbeans, drained
2 cups water
1 chicken bouillon cube
1 tbsp olive oil
1 cup onion, chopped
1 1/2 cups buttermilk
1/2 tsp black pepper
1/4 tsp salt

In a saucepan combine first three ingredients. Bring to a boil and then reduce heat and simmer uncovered 15 minutes. In a small skillet heat olive oil and add onion; cook 5 to 6 minutes or till tender, add to buttermilk mixture. Pour half of butterbean mixture into a blender and process till smooth. Pour pureed mixture into a large bowl and repeat procedure with remaining butterbean mixture. Return pureed mixture to saucepan and stir in buttermilk, pepper, and salt. Cook over medium heat till heated through. Makes 4 to 6 servings
