These are great! I've also used some sweet potatoes in addition!

3 very large russett potatoes
1/4 tsp sugar
3 tsp chili powder
1 tsp Cajun spice

Preheat oven to 400 degrees. Cover a large baking sheet with foil. Slice potatoes into eighths lengthwise. Pat dry and place on baking sheet. Coat all sides of potatoes with no stick spray and sprinkle the sugar on them. Sprinkle with chili powder and Cajun seasoning. Coat them evenly. Put potatoes in oven and lower the heat to 350 degrees and bake about 30 minutes or till potatoes are crisp. 4 servings

208 calories
0 mg cholesterol

Oh they are. And when DH went on his strict diet I thought we'd never eat fries again! These aren't quite the same, but better than never having fries again! And if you watch them close you can really brown them!

Actually, don't. My DH used to work for a rib shack, and the main ingredient in the rubs is sugar. It brings out/enhances the other flavors, and unless you saw him make the rubs, you would never know there was sugar in it. :)

I never thought about leaving the sugar out, because there is such a small amount, but some people just can't eat it; like a diabetic. I wonder if a sugar substitute would work as well? Morrigan1974, would you ask you hubby? I'd be interested in knowing the answer to that! Thanks!
