First meal:
Mini Turkey Meatloaves
2 tsp olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
2 1/2 lbs ground turkey
1 12 oz btl. chili sauce
3/4 cup Italian seasoned dry breadcrumbs
1 egg
1 tbsp worcestershire sauce
3/4 tsp pepper
3/4 tsp dried oregano
Preheat oven to 375 degrees. In a nonstick skillet heat oil over low heat. Add onion and garlic and cook stirring till softened, about 5 minutes. Remove from heat and cool. Combine turkey with 1/2 cup chili sauce, breadcrumbs, egg, worcestershire , pepper and oregano. Shape into 7 loaves and place in a shallow roasting pan. Brush with remaining chili sauce. Bake till meat thermometer registers 180 degrees; about 55 minutes. Reserve 1 loaf for next recipe.

Spaghetti with Meat Sauce
12 oz spaghetti
1 26 oz jar pasta sauce
1/3 cup shredded parmesan cheese
reserved turkey meatloaf, crumbled
Cook spaghetti according to package directions and drain. Transfer to a serving dish. In a pot over medium low heat combine sauce, cheese and oregano. Add meatloaf. Cook stirring till heated through, about 8 minutes. Pour over pasta and sprinkle with additional cheese if desired. 6 servings
