I like this because you can keep it in the refrigarator for up to around 4 weeks so you always have something quick for a little appetizer tray if someone drops by.

4 ounces grated sharp cheese ( you can use swiss also)
1/2 cup mayonnaise
1/2 small onion, grated
Crackers (whatever you prefer)

Mix together cheese, mayonnaise and onion. Spread on crackers and broil till bubbly.

That similar to the way I make piminto cheese, except instead of onion, I make it with piminto.
