With time fast approaching of the kids being on holiday break this is a nice change of pace for a breakfast idea; it works grea for other meals also though.

8 oz fat free cream cheese,softened
2 tbsp skim milk
2 eggs OR 4 egg whites
2 oz Swiss cheese, shredded
2 tbsp green onions, chopped
1 - 10 oz can biscuits
5 slices bacon, crisply cooked & crumbled

Grease 10 muffin cups. Beat cream cheese, milk and eggs on low speed till smooth. Stir in Swiss cheese and green onions. Set aside. Separate dough into 10 biscuits. Place 1 biscuit in each muffin cup and press firmly into bottom and up sides forming a 1/4" rim. Place half of bacon in the bottom of the dough lined muffion cups. Spoon about 2 tbsp cheese mixture over the bacon in the cups. Bake at 375 degrees for 21 to 16 minutes or till filling has set and edges of the biscuits are brown. Sprinkle each with remaining bacon and lightly press into the filling. Remove from the pan and serve, Makes 10 servings
