1 pkg. ( 9 oz) yellow cake mix
1 cup quick cooking oatmeal
6 tbsp unsweetened applesauce
Egg substitute equal to 1 egg
2 tbsp margarine, melted
1/2 tsp apple pie spice
1/2 cup raisins

In a mixing bowl, combine first six ingredients and beat till blended. Stir in raisins. Drop by tbsp 2" apart onto baking sheets that have been sprayed with nonstick cooking spray. Bake at 375 degrees 10-12 minutes or till edges are lightly browned. Cool 6 minutes on baking sheet before removing to wire rack to cool completely. Makes about 2 dozen

When I moved, I had 8 boxes of cake mixes!!:eek: :p

My DH loves soft raisin cookies. This is a keeper!!!

OMG! :eek: At least it is an easy recipe too, so you have time to do all that unpacking!;)
