If you like Reuben Sandwiches you'll like this soup!
1 tbsp margarine, softened
3 slices rye bread
1 can (11 oz) condensed nacho cheese soup, undiluted
1 can ( 10 3/4 oz) condensed cream of mushroom soup, undiluted
3 cups milk
1 can ( 14 oz) sauerkraut, rinsed and drained
12 oz deli corned beef, diced
1 cup mozzarella cheese, shredded
Butter bread on both sides and cube. Place on ungreased baking sheet and bake 6-8 minutes at 375 degrees. In a large pan, combine soups, milk, sauerkraut and corned beef; cook and stir 8 -10 minutes or till heated. Add cheese; stir till melted and top with croutons. Makes about 2 quarts
