2 oz butter
8 slices smoked back bacon, cut into pieces(Canadian bacon works)
4 oz mushrooms, sliced
6 potatoes, peeled & boiled
1/2 cup heavy cream
4 oz cheddar cheese, grated
1 tbsp parsley
salt and pepper to taste
Melt butter and fry bacon till browed and remove from pan. Put onion and mushrooms in pan and cook till they start to brown. Cut boiled potatoes into wedges and arrange with fried bacon, mushrooms, and onions in a baking dish/ Pour the cream over the top and cover with grated cheese, parsley, salt and pepper. Bake till golden brown on top rack of oven at 435 degrees for about 20 to 30 minutes.
