Iam after a personally tried and true ginger bread recipe for ginger bread men.
There are so many on the net but I want one that I know has been made and tastes yummy by you.
Any help?

Here is the one I use:
Great Big Gingerbread Cake: a recipe for parents and kids to make together
1 cup sugar
1 stick margarine, softened
½ cup molasses
1 cup boiling water
2 tsp baking soda
1 tsp baking powder
2 cups flour
1 tbl cinnamon
½ tbl ground ginger
½ tsp allspice
2 eggs
1. Grease a 9X13 pan. Line the bottom of the pan with parchment or waxed paper. Turn the oven on to 350.
2. Mix together the sugar and margarine in a big bowl.
3. Ask a grownup to pour the boiling water in the big bowl. Mix it in.
4. Add the molasses to the big bowl and mix.
5. Mix together the baking soda, baking powder, flour, and spices in a smaller bowl. You can use a chopstick to mix it up!
6. Slowly pour the flour mix into the bigger bowl. Stir it in until all the lumps are gone.
7. Crack 2 eggs into the big bowl and mix it up.
8. Pour the batter into your baking pan.
9. The batter will be very bubbly!
10. Ask a grownup to put it into the oven for 25 to 30 minutes.
11. You can eat this cake warm or cold.

Do you have a gingerbread biscuit/cookie recipe in that stash to Barb?
I'll copy that recipe above though as I want to make the cake as well.
I'm into trying ginger at the moment, for Christmas for something different, or different for me anyway LOL

I love these ginger cookies. They are not the thin kind that you roll and decorate, though. They are giant round cookies. YUM!
BIG SOFT GINGER COOKIES
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3/4 cup butter or margarine, at room temperature
1 cup sugar
1 egg
1/4 cup molasses
2 tablespoons sugar
Combine flour, sugar, ginger, baking soda, cinnamon & cloves in small bowl. Set aside.
Beat butter with electric mixer on medium speed for 30 seconds. Add sugar until well mixed. Add egg and molasses. Beat well. Stir flour mixture into egg mixture.
Shape dough into golf-ball size balls. Roll in the 2 tablespoons sugar to coat. Place about 2 inches apart on ungreased cookie sheet.
Bake at 350 about 10 minutes or until light brown and still puffed. Do not overbake. Cool cookies on baking sheet for 2 minutes, then transfer to wire rack to cool completely.
Store in airtight container.

We like the pffernusse type biscuits so your big puffy ones may do it for us, Hey the gingerbread men are hard to put clothes on I found! LOL

Just found your request Bilby~ ! Here is a recipe I have used over and over and we love it!
6 tbsp oil
1/2 cup sugar
1/2 cup dark molasses
1/4 cup water
2 1/2 cups all purpose flour
3/4 tsp salt
1/2 tsp baking soda
3/4 tsp ginger
14 tsp nutmeg
1/8 tsp allspice
Raisins
Candied Cherries
Decorator's Icing
Cream the oil and sugar. Blend in molasses, water, flour, salt, baking soda, ginger, nutmeg, and allspice. Cover and chill 2 to 3 hours. Heat oven to 375 degrees. Roll dough 1/4" thick on lightly floured cloth covered board. Cut with gingerbread boy cutter, place on ungreased baking sheet. Press raisins into dough for eyes, nose, and buttons. Bake 10 to 12 minutes. Immediately remove from bakig sheet. Cool. Trim with Decorator's Icing.
Decorator's Icing
Mix 2 cups confectioners' sugar and 1 tbsp water. Add more water, 1 tsp at a time till icing is of the consisitency that can be used easily in a decorator's tube anf yet hold its shape.

I've never made ginerbread cookies. I need to try and make some because I have a big bottle of molasses I would like to use. Its just sitting in my cabinet. There is nothing like a good crispy gingerbread cookie. I will use your recipe Barb plus I'll add some small chunks of ginger.

SushiMushi, the cookie recipe I posted here is not a crispy cookie; it's a soft cookie. You might have better luck with cat lover's recipe.
