I made this after watching Paula Deen many months back. I LOVE it as I am a tomato-a-holic! LOL

Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper
Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.

Do you think this would work with green tomatoes as well as ripe ones?

I have never tried it with green ones. Personally, I think because of the cheese and seasonings such a basil, I really think the red would be better. But, that is only an opinion because I have never tried it any other way. I like the green ones fried! :D

We used to eat them fried all the time, but because of DH diet we don't do that too much any more. Although if I tried green ones in this recipe I would just happen to have some in the kitchen and wouldn't some fried green tomaotes be good right now! LOL

Let me know if you try them with green tomatoes. I would like to know if it turns out well.
