View Full Version : Herb Rubbed Bison Sirloin Tip Roast

1 tbsp paprika
2 tsp kosher salt
1 1/2 tsp garlic powder
1/2 tsp dried oregano, crushed
1/2 tsp dried thyme, crushed
1 tsp black pepper
1/2 tsp onion powder
1/2 tsp cayenne pepper
3 tbsp olive oil
1 3 1/2 lb boneless bison sirloin tip roast

In a bowl combine ingredients from paprika through cayenne pepper. Stir in oil till combined and set aside. Trim roast of visible fat and spread oil mixture over meat. Put onto a rack in a shallow roasting pan. Roast at 375 degrees for 15 minutes, then reduce temperature to 300 degrees. Roast 60 mi utes more or till instant thermometer registers 140 degrees. Cover roast tightly with foil and let stnd on rack in pan for about 15 minutes. After standing the instant read thermometer shuld read 145 degrees which is medium rare. Thinly slice across grain to serve.
