1 pound ground bison
1 large onion, chopped
2 14 1/2 oz cans diced tomatoes
1 16 oz can chili beans
1/2 cup water
3 tsp chili powder
1/4 tsp salt
1/2 tsp ground cumin
1/2 tsp black pepper
1/4 cup chopped fresh cilantro
Toppings, shredded cheese, pickled jalapeno peppers, & sour cream

In a large skillet cook and stir bison and onion till bison is browned and onion is tender. Stir in undrained tomatoes, beans, water, chili powder, salt, cumin, and pepper. Bring to boiling and reduce heat. Simmer, covered about 1 hour stirring occasionally. Stir in cilantro. Cover and cook another 10 to 15 minutes. Put toppings on each serving. Makes 4 to 6 servings
