A variation of a macaroon.

1 egg white
1/4 tsp cream of tartar
1/4 cup sugar
1/2 tsp almond extract
2 tbsp finely chopped walnuts
1/2 cup rolled oats

Preheat oven to 350 degrees. Lightly spray a baking sheet with nonstick spray. Place egg white in a small deep bpwl and beat on medium speed of an electric mixer till frothy. Add cream of tartar and beat on high speed till egg white is stiff. Gradually add sugar, 1/4 at a time, beating well after each addition. Beat in almond extract. Fold walnuts and oats into egg white, gently but thoroughly. Drop mixture by rounded tespoons onto prepared baking sheet makeing 24 cookies. Bake 12 minutes till bottoms of cookies are lightly browned. Remove to wire rack to cool.

Makes 8 servings (3 cookies each)
