This my DHs absolute favorite dish in the world!
Meatloaf Pinwheels
1 1/2 lbs hamburger
salt, pepper, garlic powder to taste
1/4 cup bread crumbs
1 egg
1 cup rice cooked to directions and cooled
2 T dried parsley
wax paper
Mix meat, seasonings, bread crumbs, and egg. Spread on wax paper to make a rectangle. Mix rice and parsley. Pour over hamburger. Roll up jellyroll style. Refrigerate until firm--about 2 hours. Slice and bake on a cookie sheet in a 325 degree oven until brown.
