Beer and Cheese Soup

2 to 3 slices pumpernickel bread
3 tablespoons cornstarch
1 tablespoon butter
¼ cup finely chopped onion
¼ teaspoon dried thyme leaves
2 cloves garlic, minced
1 – 14 ounce can chicken broth
1 cup beer
1 cup milk
1 ½ cups diced American cheese
1 cup shredded cheddar cheese
½ teaspoon paprika

Preheat oven to 425 degrees. Cut bread into ½ inch cubes. Place on baking sheet and bake 10-12 minutes, stirring once. Bread should be crisp. Set aside.

In a small bowl stir 3 tablespoons water into cornstarch. Set aside.

Place onion, butter, thyme and garlic in a saucepan. Cook and stir over medium heat for 3 to 4 minutes. Onion should be tender.

Add broth to saucepan; bring to a boil. Stir in beer, milk, cheeses and paprika. Reduce heat to low. Stir in cornstarch mixture. Stir soup until cheese melts. Soup should simmer and thicken. Place into bowls and top with croutons.

Sounds like something I would like! Will have to try it and make something different for DH though!

What can't he eat?

You can play with this one a lot. You can substitute a vegetable broth for the chicken broth. You can add swiss instead of cheddar. You can use any left over bread.

He can't have over 30 g total fat,10 g saturated fat,150 mg cholesterol PER DAY That may not seem bad until you keep track one day and see how quick it adds up when you count all the ingredients of a recipe.

So that leaves very little without subbing fat free cheeses and such and they don't take well in some things when you count on them melting. So in this recipe it is the cheese on why he couldn't eat it. And he is a big eater; if he has to have a small portion he won't eat it at all.

I've tried the fat free cheeses. I just can't use them. I can use low fat. They work fine but the fat free just doesn't cut it.

I know what you are talking about, but fat free is all he can eat so you either use it or do without.
