This is a big favourite at my house. It is good warm with ice cream, room temp. and even cold out of the fridge. It packs great too. Hope you like it!

Chocolate Chip Rhubarb Cake

1 1/2 cups brown sugar
1/2 cup margarine
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 3/4 cup chopped rhubarb
1/2 cup chocolate chips


Topping:
1 teaspoon cinnamon
1/2 cup chopped nuts
1/2 cup chocolate chips
[F1/2 cup brown sugar

Cake:
Cream together brown sugar and margarine then beat in egg and vanilla.

Mix flour, baking soda and salt together and add to the creamed mixture, alternately with sour cream, beating after each addition. Stir in rhubarb and chocolate chips.

Pour into a greased 9 x 13 inch baking dish.

Topping:
Combine topping ingredients and sprinkle over the cake batter. Bake at 350 degrees for 45 minutes.

Thanks cooked! My rhubarb garden is shot for the year, but I'll print this out and be sure to prepare this next spring! Thanks for sharing. Always looking for recipes to use things we gow at home; really helps with the grocery bill!
