New England Clam Chowder
8 slices of bacon
1 medium onion, diced
3 large potatoes, cubed
2 small cans chopped clams
1/4 cup flour
2 cups milk
2/3 cup half and half
Cook bacon until crispy. Crumble and drain. In large dish with a lid, mix together onion, potatoes, and the liquid from the clams. Microwave 3 minutes. Stir in the flour and 2 cups of milk. (Mix the flour with about 1/4 cup milk before adding the rest of the milk to avoid clumps.) Microwave 8-10 minutes until thick. Add drained clams and 2/3 cups half and half. Cook until hot.
