I made this the other night and we really enjoyed it as a different one than my usual. This was originally from Southern Living back in 2005, but of course I made some changes!
3 pounds potatoes, peeled and chopped into bite size pieces
1 cup fat free mayonnaise
3 tbsp pickle relish
2 tbsp Dijon style mustard
1 tbsp black pepper
1 cup grape or cherry tomatoes, cut in half
3 green onions, chopped (use the green also)
2 hard cooked eggs, chopped
4 bacon slices,cooked and crumbled
Boil potatoes in water to cover just till tender and drain. Stir together remaining ingredients except bacon pieces and add cooked potatoes to this mixture. Toss gently till blended; cover and refrigerate at least 4 hours. Stir in bacon pieces right before serving. Makes 8 servings
