Vanilla Pudding
3/4 cup sugar
3 T cornstarch
3 cups milk
4 egg yolks
1 T butter
2 t vanilla
In a heavy saucepan, stir together 3/4 cup sugar and 3 T cornstarch. Stir in milk. Cook over medium heat until bubbly. Cook and stir 2 minutes more. Do NOT boil. Reduce heat. Stir in butter and vanilla. Slowly add a tiny bit of the hot mixture to the yolks a small bit at a time to temper the eggs so that you do not have scrambled eggs. After you get a couple cups added to the eggs, add the egg mixture to the hot mixture.
Cover with plastic.
For banana pudding:
Slice bananas. Cover the bottom of a 13X9 inch pan with banana slices. Cover the bananas with Vanilla wafers. Cover the banana and cookie layers with pudding. Continue this process until you are out of pudding.
