This is good to cook on the grill on those hot days when the kids want pizza; or even to take along for a picnic and cook on the picnic grill. Not a traditional pizza, but has the pizza flavor
1 1/2 lbs ground beef
1/3 cup old fashioned oatmeal
1 small onion, chopped
1 egg
1/4 cup ketchup
2 tsp instant beef broth
1/4 tsp pepper
1 can (8 1/2 oz) cut green beans, drained
1 can (7 oz) whole kernel corn, drained
1 jar (2 1/2 oz) sloiced mushrooms, drained
1 can (10 oz) pizza sauce
1 cup shredded cheddar cheese
Combine ground beef, oatmeal, oniojn, egg, ketchup, beef broth and pepper in a bowl and mix till blended, Shape into 16 meatballs. Tear four 12" squares of heavy duty foil and place 4 meatballs in center of each piece of foil. Divide green beans, corn, and mushrooms among packets. Spoon pizza sauce over each and top with the cheese. Seal the packets tightly inot a drug store wrap. Build a low fire or use a gas grill and grill 4" from the heat, turning packets several times with tongs for about 45 minutes. Open the packets and serve with hard rolls, carrot sticks and celery sticks.
