Chocolate Coconut Cookies
1/2 c. shortening
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 (7 ounce) bar semi-sweet chocolate
1/2 c. shredded coconut
In a bowl: Cream together shortening and both sugars. Beat in egg. In a separate bowl mix together flour, baking soda and salt and then add to first mixture. Chop chocolate and add to mixture. Then stir in the shredded coconut. Drop by teaspoonful onto a greased baking sheet in a 350 degree oven for 10 minutes. Makes 35-40 cookies.
