Maple Refrigerator Cookies
1 c. shortening
2/3 c. firmly packed brown sugar
1 egg
1 tsp. maple flavoring or extract
3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
In a large bowl cream together shortening and sugar, then add egg. Beat well and then add maple flavoring. In another bowl sift together flour, baking powder and salt, add to first mixture and mix well. Shape into 2 rolls that measure 2" in diameter, wrap in plastic wrap and chill in the refrigerator until firm. Remove from refrigerator and slice 1/8" thick. Place cookies on a greased baking sheet. Bake in a preheated oven set at 350 degrees for 7-8 minutes.
