Italian Cream Cake
2 cups sugar
1/2 cup Crisco
1 stick butter
5 egg yolks
5 egg whites
1 cups pecans
2 cups flour
1 cup buttermilk
7 oz coconut
Cream Crisco, butter, and sugar. Add egg yolks, one at a time, beating well after each. Add flour and soda alternately with buttermilk. Stir in rest of ingredients except egg whites. Beat egg whites until fluffy. Fold the egg whites in to the mixture. Bake in 3 layers of round cake pans on 350 degrees for 35 minutes.
Icing:
1 (8 oz) cream cheese
1 stick butter
1 t vanilla
1 box powdered sugar
When cake is cooled ice each layer. Coat with coconut.
