I've been searching and searching for a cheeseburger dip recipe that doesn't contain Velveeta.
We had a cheeseburger dip at Red Robin that my DH reallly liked and he swears that they didn't use Velveeta in it. He really dislikes anything with Velveeta in it.
Does anyone have a tried and true recipe like this?

Can he identify the cheese? All of my recipes calls for "packaged, cubed, processed cheese".
They call for browned beef, canned tomatoes and cheese. The one I'm looking at right now also calls for garlic powder.
If you want the dip to have a kick to it, used the canned tomatoes with chilis.

Hmmm, Do you suppose he was fooled? Maybe with their other ingredients he really didn't pick out the velveeta! LOL I've been searching through my recipes for the ones I've actually made and so far velveeta is the cheese. I'll continue looking and if I find one I'll post it. I'll also let you know if it turns out to be one I haven't tried yet.

Tami, what about making a cheese dip by making a béchamel sauce and add sharp cheddar cheese to it? Then you could just add ground beef that was cooked with diced onion, jalapeños, and whatever else it has in it. If you get energetic, you could try that.
We don't have any Red Robins around here, so I don't know what all is in it.

Been doing a search..... all mine do have velveeta in them. So I've been doing a search through some of my grandmother's recipes I have. Here is one I have found that was her's; I have not made this one myself so I can't tell you about the taste. She says this was originally a Campbell soup recipe, but she had made changes so here goes:
Cheeseburger Dip
1 can (11 oz) campbell's condensed cheddar cheese soup
1/2 cup salsa
1 pound ground beef cooked with 1/2 cup onion and drained
In a saucepan combine the soup and the salsa. Over medium heat, heat till hot and bubbling. Add ground beef and onion that you have just cooked and drained; stir and serve with tortilla chips
I'll still look through my cokbooks and see what else I can find.

Ya know, I had no idea what a "cheeseburger dip" was until I read this chain.
Nevertheless, I feel obligated to provide some kind of answer. What I can offer is how to make awesomely juicy and tasty burgers. I suppose you could follow my burger recipe, only don't make them into patties, just use my recipe for the ground beef and add it to Cat Lover's recipe.
1 lb 85% ground chuck. NOT sirloin and don't go higher than 85%. (I said juicy and tasty, not healthy or calorie conscious)
Add a half cup of homemade beef stock, an ample sprinkling of olive oil, 2 egg yolks, 1-2 tablespoons onion powder, sea salt and freshly ground black pepper.
I'm telling you this burger will luxuriously embrace your palate. It's almost too good to turn into dip. (If I may say so myself).

I just can't use meat that is 85%, I just can't LOL. And 2 egg yolks? I'm laughing. When I make an omlette, I use 3 egg whites with only one yolk. I throw the other two yolks out.

You don't absolutely have to use the 85% meat.
Use the 80% instead.

Audrey, have any dogs or cats? I always hard boil all our yolks and they get them all. Vet said don't worry about killing them by feeding them so many, they won't live that long. Since we gather our own eggs everyday we use lots of eggs. I just add a little yellow food color to make them look "real" LOL

Here is a recipe that might fit the bill ajrsmom! I have not made this, but found it in a Paula Deen magazine
Beefy Beany Cheesy Dip
1 lb ground chuck
1 medium onion, chopped
1 (8 oz) pkgs. cream cheese, softened
1 (15.5 oz) can black beans, drained and rinsed
1 (4.5 oz) can chopped green chilies
1 cup sour cream
2 tsp ground cumin
1 tsp chili powder
1/4 tsp salt
1 (8 oz) pkg. shredded Monterey Jack cheese with peppers
1 ( 8 oz) pkg. shredded sharp cheddar cheese, divided
Preheat oven to 350 degrees. Lightly grease a 2 quart baking dish. In a large skillet combine first two ingredients and cook till beef is browned and crumbles. Drain well. Stir in cream cheese, beans, and chilies. Cook, stirring frequently till combined. Remove from heat. Stir in sour cream, cumin, chili powder, salt, Monterey Jack and 1 cup cheddar. Spoon into prepared baking dish. Sprinkle with remaining cheddar cheese. Bake 30 minutes or till hot and bubbly. Serve with corn chips.
