Turkey Potato Chowder

1 pound ground turkey
1 medium onion, chopped
1 celery rib, chopped
1 medium red bell pepper, chopped
6 cups chicken stock
1 large russet potato, cut into ¾ inch cubes
1 bay leaf
½ teaspoon salt
¼ teaspoon pepper
½ cup heavy cream
¼ cup chopped parsley

In a large saucepan, cook ground turkey, onion, celery and bell pepper, over medium heat, stirring often to break up lumps. Turkey should no longer be pink, about 5 minutes.

Add chicken stock, potato, bay leaf, salt and pepper. Bring to a boil over high heat. Once boiled, reduce heat and simmer, stirring occasionally for 45 minutes.

Stir in heavy cream and cook until heated through, about 3 minutes. Stir in chopped parsley. Remove bay leaf and serve.
