Hi folks,
I am new here and I was curious - does anyone have a great recipe for an eggless cake. I am hoping to bake one as a mother's day gift for a friend.
Thanks in advance.
Tornye.

BQ123, do you need just an eggless cake such as for no yolk or the entire egg? And can it contain other dairy products? I may have something that will work for you, but just wasn't quite sure exactly what you are looking for?

Thanks for your reply, Cat Lover. The cake can contain other dairy products, but no eggs - the entire egg, that is.

Depression Cake

3 cup flour
2 cup sugar
pinch of salt
2 tsp baking soda
10 tbsp unsweetened cocoa
2 tsp vanilla extract
3/4 cup oil
2 tbsp vinegar
2 cup cold water

Sift flour, sugar, salt, baking soda, and cocoa powder into a large bowl. Add the remaining ingredients and mix with a large spoon till smooth. Spoon into a greased and floured 13 x 9 x2" pan. Bake at 350 degrees for about 30 minutes. You can frost this or just dust it with sifted powdered sugar. Placing a paper dollie over the cake and then sprinkling the sifted powdered sugar through it makes a nice design, but if you do the powdered sugar wait till right before serving it.

This is a recipe that was in one of my grandmothers cookbooks that she had slipped in it so I have no idea where it originallly came from. I've made it and you never know it has vinegar in it so don't let that scare you! Hope you enjoy it!

BQ, this thread will be in two newsletters next weekend or Friday-ish. So others who have eggless recipes will see it and hopefully, respond.

Good luck!

Here's one that we have tried and liked:

Mix-in-the-pan Double Chocolate Snack Cake
1 2/3 cup flour
1 cup packed brown sugar
¼ cup unsweetened cocoa powder
1 tsp. baking soda
½ tsp. salt
1 tsp. vinegar
½ tsp. vanilla
1/3 cup vegetable oil
1 cup water
½ cup chocolate chips

Preheat oven to 350 degrees. Mix flour, brown sugar, cocoa, baking soda, and salt in an ungreased square pan 8 x 8 x 2 inches. Stir in remaining ingredients except for the chocolate chips. Sprinkle chocolate chips over batter.
Bake 35 to 40 minutes or until wooden toothpick inserted in center comes out clean. Cool on wire rack. Sprinkle with powdered sugar if desired. Makes 9 servings.
*If you are baking with an even larger gang of kids, this recipe can be doubled and baked in a 13 x 9 inch pan.

I'm not sure I've ever made an eggless cake, so I did a web search to see what I could come up with. http://www.ochef.com/218.htm Several of these look good. Of course I've never tried any of them. I did notice one has vinegar in it. I'm going to have to try one of these cakes with vinegar in it. It's hard to imagine not being able to taste it.

You honestly cannot taste the vinegar in the chocolate cake.

But--be warned--the vinegar and baking soda will make a cool little chemical reaction right there in your kitchen! There won't be any "eruption" but it will bubble up a good bit :D It's pretty entertaining if you have children helping you bake!

Using vinegar in a cake recipe "lightens" the cake almost like using egg whites will do. I suppose the vinegar was origianlly used when eggs couldn't be used for one reason or another.

Thanks for all the responses. I'll be looking out to see if we get any other ideas. I a recipe for a chocolate cake that is similar to the ones that have been shared so far... I am curious to see what else is out there. So far, all the recipes I have come across seem to be chocolate - Not that I mind
:-)!!!! I wonder if there are any non-chocolate recipes...

Let me page through some more of my grandmother's books and see if there is anything else. If I find something I'll post it here.

Here is one called "Applesauce Cake". I have not made this one, but found it in an Amish Dutch Cookbook I got as a kid when I went to Pennsylvania.

Applesauce Cake

1 cup granulated sugar
1/2 cup shortening
1 1/2 cups sweetened applesauce
1 cup raisins
3 cups flour
2 tsp baking soda
Pinch cream of tartar
1 tbsp brandy OR whiskey
1/2 tsp salt
1 cup nuts
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1/4 tsp ginger

Cream sugar and shortening. Sift soda and flour, add raisins and nuts, add other ingredients. Bake at 325 degrees and increase to 350 degrees.

The instructions are a little vague and it doesn't give the pan size either so a little planning will be needed!

One I make all the time but more of a loaf than a cake.

1 1/4 cup wholemeal flour
1 cup coconut
1 cup sugar (or half sweetner and half sugar)
1 cup of dried fruit
1 cup of milk
1/4 teaspoon baking powder.

Mix altogether and pop in a rectangle cake or loaf tin. (is a sticky mix)
Bake for 40 to 45 mins in a moderate oven.

As long as the portions are similar to these it is a very playable recipe.
Add 1/4 cup cooked apple and cinnamon/spices
I Mix dried fruit with flax and sunflower seeds to = 1 cup
I make in cup cake sized cakes cooking for 20ish mins.
Add 4 tabspoons sifted cocoa and 1 table spoon of extra sugar to make it chocolate.
Can add 1/2 cup choc chips
Nice if you mix 1/2 the milk while vitamising 1/4 cup prunes
Don't like an ingredient sub something else
They/it freeze(s) wonderfully.

I make these for my snacks and keep in the freezer
