I wanted to start making 'new' recipes and was just wondering what all of you do with ground hamburger??

I make a quick hamburger Stroganoff, spaghetti with ground beef, or even a type of green been casserole with ground beef is good. I have several ideas, but I am at work, where I don't have access to my recipes.

Here's a recipe that my family enjoys:

Taco Skillet

1 lb. ground beef, browned and drained
1 can (8 oz.) tomato sauce
1 cup Salsa
1/2 cup water
8 flour tortillas (6"), cut into 1" pieces
1 cup shredded Cheddar cheese

Mix meat, tomato sauce, salsa, water, tortillas and half the cheese. Heat to a boil. Cover and cook over low heat 5 min. or until hot. Top with remaining cheese.

Source: this is my adaptation of a Campbell's recipe. I'd add 1/2 cup of frozen corn if Big DS wasn't so against it! This is a great recipe to make when you have 15 minutes or less to get dinner on the table. Just have the ground beef cooked and drained ahead of time, and then you can mix up everything and it's done in a flash.

MARK’S MEATLOAF

1 ¾ lbs. 90% lean ground beef
2 eggs
2 oz. olive oil plus extra for cooking
6 oz. beef stock plus extra for drizzling
½ cup grated Parmesan or Romano cheese
½ cup plain bread crumbs
A hefty handful of chopped fresh parsley
Generous sprinkling of kosher salt and black pepper

Mix all of the ingredients in a bowl and place on an oiled sheet pan. Form a uniform rectangle 1 ½ - 1 ¾ inches in height. Place into a 350 degree oven. I remove it when the internal temperature has reached 140 degrees which is medium. Heat the remaining beef stock to a simmer and drizzle over slices of the meatloaf.

I love parmesan cheese in meatloaf. I will have to try this recipe.

Here's a quick and easy recipe that everyone seems to love

Cheeseburger Pie

1 pound ground beef
1 large onion, chopped
1 1/2 cups milk
1 1/2 cups frozen hash browns
1 cup grated cheddar cheese
3/4 cup dry buttermilk biscuit mix
3 eggs
2 tablespoons ketchup
1/2 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 400 degrees. In a skillet, cook beef and onion, over medium heat. Break meat up as cooking. Meat should no longer be pink. Drain. Stir in ketchup, salt and pepper. Mix, then add hashbrowns. Transfer to a pie plate. Sprinkle cheese on the top.

In a medium bowl, whisk together the milk, biscuit mix and eggs. Pour batter over the top of the pie mixture. Bake until batter is set, about 30 minutes.

What about Meatball Stew?

1 pound ground beef
1 egg,beaten
1/2 cup small bread cubes
3/4 cup onion, chopped
1/2 tsp salt
2 tbsp olive oil
1 - 10 1/2 oz can condensed beef broth
1 - 10 3/4 oz can condensed tomato soup
1/8 tsp thyme leaves, crushed
1 - 16 oz can white potatoes, drained and cut up
1 - 8 oz can peas, undrained

Mic together beef, egg, bread cubes, 1/4 cup onion, and salt. Shape into 36 meatballs. In a large pan brown in olive oil and pour off fat. Add remaining ingredients and heat stirring occasionally. Makes about 6 1/2 cups

Mexican Stuffed Shells

12 pasta stuffing shells, cooked and drained
1 lb ground beef
1 jar (12 oz) medium picante sauce
1/2 cup water
1 (8 oz) can tomato sauce
1 can ( 4 oz) chopped green chiles, drained
1 cup shredded Monterey Jack cheese
1 can (2.8 oz) french fried onions

Preheat oven to 350 degrees. In a large skillet brown beef and drain. In a small bowl combine picante sauce, water and tomato sauce. Stir 1/2 cup sauce mixture into the beef along with chiles, 1/2 cup cheese and 1/2 can french fried onions and mix well. Spread half of the remaiing sauce mixture in the bottom of a 10" round baking pan. Stuff the cooked shells with the beef mixture and arrange them into the prepared dish and top with remaining sauce. Bake covered at 350 degrees for about 30 minutes or till heated through. Top with remaining onions and cheese and bake uncovered an additional 5 minutes or till cheese is melted. Makes 6 servings

I make homemade macaroni and cheese (using cheddar cheese and feta) and often add fried hamburger and onions to it. My kids love it.

My family loves this. I use what ever cheese I have available. I even mix it.

Hamburger Soup



1-1/2 pounds ground beef
2 cups diced onions
1 cup diced carrots
1 cup diced celery
3 garlic cloves, minced
3 cans (14-1/2 ounces each) chicken broth
1 can (15 ounces) crushed tomatoes
2 tablespoons Worcestershire sauce
1 teaspoon hot pepper sauce
1/4 cup stick margarine
1/2 cup all-purpose flour
In a large saucepan or soup kettle, cook the beef, onions, carrots, celery and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in broth, tomatoes, Worcestershire sauce and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
In another saucepan, melt margarine over medium-low heat. Stir in flour until smooth. cook and stir for 6-8 minutes or until mixture turns golden brown. Carefully stir into soup. Cover and simmer for 15 minutes, stirring occasionally.

I make hamburger gravy.

1 lb ground beef
2 cans beef broth
2 beef bouillon cubes
salt and pepper
cornstarch
Cook ground beef until browned, drain off the fat. Add the broth and bouillon cubes. Make a slurry with cornstarch and water, add to the mixture and stir until thickened. Add a little salt and pepper to taste.
Use over mashed potatoes, rice or noodles, or even over bread.

Mexican Casserole


1 pound ground beef
1 medium onion, chopped
1 "lunch size" pkg corn chips
2 cans Rol-Tel tomatoes
5 oz grated cheese

Brown the meat and onion. Line a casserole dish with corn chips, add a layer of ground beef mixture. Cover with Rol-Tel and top with cheese. Bake at 350 degrees till cheese melts. 6 servings

Mandarin Rice Bake

1/2 cup uncooked rice
1 cup boiling water
1/2 tsp salt
1 lb ground beef
2 tsp olive oil
1 1/2 cup diced celery
1 1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped pimiento
1 can crem of mushroom soup
2 tbsp soy sauce

Put rice into a greased 2 qt casserole. Add boiling water and salt and set aside. Slowly brown the meat in the hot oil. Put meat, celery, onion, green pepper and pimiento over the rice. Stir in the soup and soy sauce. Cover and bake for 1 hour and 15 minutes at 350 degrees. Makes 8 servings
