Black Bean Pie

INGREDIENTS:
2 (15 ounce) cans black beans, drained
1 (4 ounce) can diced green chilies, drained
1 (14.5 ounce) can peeled and diced tomatoes, drained
1 onion, chopped
3 cloves garlic, crushed
2 (9 inch) unbaked pie crusts
1 (16 ounce) package Cheddar cheese
2 (6 inch) flour tortillas

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). In a large bowl, mix the beans, green chiles, tomatoes, onion and garlic. Line 9 inch pie pan with one pie crust. Pour 1/4 of the bean mixture into crust and spread evenly. Sprinkle with some of the cheese and cover with a tortilla. Continue to layer mixture the with cheese and tortillas, then cover with second pie crust. Flute edges and make slits in top. Bake in preheated oven for 45 minutes, or until crust is golden.

I used to but Stokely's black beans in a can, labeled their gold label brand; can't find them any more; is this something you can get anywhere near you/ I don't know if they stopped canning them or just pulled out of the market here.

I have found several brands of canned black beans here. I have found them in any grocery store, including Walmart. That's not including the dry kind. I usually make this in February during Black History Month. I started making it when my children were small and I was educating them at home.

I can find all kinds just not the gold label one I really liked. They were seasoned so good! I did find Aunt Sylvia's ( I think that is the brand) and they are seasoned, but I haven't opened them yet.

OIC, it's the brand and seasoning that you like. With this recipe, I am not picky about the beans since I rinse them and add my own seasoning to the recipe. I was too busy to make it this February, so I'll have to make twice the amount next Febuary! It'll be a good time to educate the GKs about a part of history.

Yes, i keep trying to duplicate the way they were seasoned, but just can't quite get them exactly like those! Still trying! LOL

I wonder if you can get the list of ingredients online somewhere. That might have the list of seasonings on it. Just a thought.

I'm still hoping to find someone with at least one can of the gold labels hanging around! I guess I could contact Stokely online and see if they could help; just hadn't thought of that.

That's what I would do. But, you'd have to reseason when you made the pie. I like a lot of garlic in mine. lol

The recipe calls for 10 flour tortillas, but I have never used more than 2.

I usually do use lots of garlic! Oh yes; most recipes usually call for such a small amount on a tortilla, but I like much more on mine! And when they are layered like this one I usually like less too.
