Buttermilk Cookies

1 ½ cups flour
1 teaspoon baking powder
½ teaspoon baking soda
4 tablespoons butter or margarine
1 ¾ cup buttermilk

Preheat oven to 425 degrees. Grease a cookie sheet.

Sift the dry ingredients into a bowl. Add in the butter and mix until a crumb mixture exists. Gradually add in the buttermilk and mix with a fork until a dough forms.

Roll out the dough ½ inch thick. Use a round cookie cutter. Place on cookie sheet and bake 12-15 minutes.

These are not "healthy" with the butter and buttermilk. I've tried margarine and they don't taste the same.

I can make them lower fat for DH with using his allowable margarine and using low fat buttermilk. There are days he can have a few "bad things" depending on how we manage the rest of the days food.

I love cookies. We bake a lot and end up giving most of it away. I'm willing to guess I have over 500 cookie recipes. Some are very similar, but each is just a tad different. Some call for more sugar. Some call for just white sugar, while others call for some brown and some white. So...I've ended up with many cookie recipes.
