Pineapple cake/pudding.
1 vanilla cake mix
1 small can crushed pineapple
1 egg
Mix all together by hand in a bowl.
Can be put into a cake pan and used as a cake, cooked and iced with passionfruit icing.
OR
Put into individual dishes approx 6-8 depending on cake mix size.
Bake and serve warm in dish with custard or ice cream.
OR
Cupcakes with cream cheese icing.
I made this tonight as a dessert, filled dish with custard. It was very nice and light and yummy.
Out of this smallish cake mix (generic brand cheapie) I made 4 desserts and 4 cupcakes.

Icing sugar and passionfruit pulp, if you don't like it tangy use less passionfruit and a bit of hot water, but I love the tangyness of just the passionfruit and sugar LOL same goes for lemon icing, icing sugar and just lemon juice. I put the lemon icing on banana cake instead of chream cheese less calories LOL.
I mix it till it's a thick paste not to runny unless you just want to drizzle it over.
Those cakes or as the pudding were just so yummy and surprisingly light, I've been asked I have to do those again

I do make a lemon glaze that way, just never thought about passionfruit. Do you grind up the passionfruit into pulp yourself? I do persimmon all the time by just grinding in a hand grinder and freeze the pulp for later. WOuld that work for the passionfruit? Thanks!

If passionfruits are cheap enough I just use the pulp from 1 or 2, if not just a couple of table spoons from a tin. I don't grind up the seeds just use it as is, as I would think that would make it gritty icing, whole seeds slide down your throat easier.
I just taste it as I go and see what it's like, then decide if it needs a bit of water or more pulp.
Got me feeling like passionfruits now LOL
I don't see why persimmons would not work the same way,I've never tasted one but I guess, try and see what it's like, if it's good let me know and I might give it a go.

The only problem with making icing from persimmons is it would be brown! LOL The plup from them is very dark which works okay in muffins,cookies, and cake, but don't think icing would work well looks wise. It would probably taste good! LOL I just hope my persimmon trees have some on them this year!

Sprinkle the persimmon icing with coconut, dessicated coconut hides a lot of faults LOL, you'd get the flavour of the persimmons but cover teh colour with a light sprinkle of coconut, that stuff along with coloured sprinkles hides a million faults with the tops of cakes etc LOL

Sounds good to me, but DH wouldn't touch it with coconut on it! LOL Sounds like a good "tip" though!
