Spaetzle is a dish of tiny noodles made of flour, eggs, water or milk, salt and sometimes nutmeg. It means “little sparrow” in German
2-1/2 pounds beef bottom round steaks, trimmed, cut 3/4" thick
2 tsp flour, plus 2 tsp mixed with 2 tbsp cold water
1 can beef broth
1/2 tsp salt
1/2 tsp pepper
2 tbsp vegetable oil
5 tsp paprika
2 medium onions, sliced 1/2" thick, separated into rings
2/3 cup sour cream
1 pkg spaetzle, 9 to 10 1/2 oz., cooked
Cut beef into 6 pieces. Combine 2 tablespoons flour, salt and pepper. Lightly coat beef with flour mixture. Heat oil in large nonstick skillet over medium. Brown beef in batches. Remove. Pour off drippings. Return beef to skillet. Add broth and paprika and bring to a boil. Reduce heat and cover tightly and simmer 45 minutes. Add onions to skillet and continue cooking covered 30 to 45 minutes or till beef is fork tender. Remove beef and onions and keep warm. Remove cooking liquid andskim fat. Return 2 1/2 cups liquid to skillet and whisk in flour and water mixture. Bring to a boil and cook and stir 1 minute or until thickened. Remove from heat then whisk in sour cream. 6 servings
