This is a terrific topic! :)
Here are some other ideas:
Homemade fried rice (I did the math on this one time (http://sfomomfridge.blogspot.com/2008/01/frugal-fried-rice-by-coupon-queen-aka.html) and found out just how inexpensive it can be!)
Chili (with ground beef or turkey in a red chili (http://www.momsmenu.com/forums/showthread.php?t=328) or shredded chicken for a white chicken chili (http://www.momsmenu.com/forums/showthread.php?t=3121))
Chicken pot pie (http://www.momsmenu.com/forums/showthread.php?t=3120) with homemade crust
Spaghetti and meatballs (http://www.momsmenu.com/forums/showthread.php?goto=newpost&t=3119) (I make my own meatballs and sauce. It costs me $6 for the meat, $5 for the tomatoes and maybe $3 worth of other ingredients to make enough meatballs and sauce to serve a family of 5 at least 6 dinners.)
I try not to pay more than $2 per pound for meat. With 5 in my family, we usually use about 1 1/2 pounds of meat per meal, give or take. Salads, vegetables, sides and bread round out the meal and help stretch the meat.
I need to learn how to figure this stuff out.

With groceries going up as much as other things this ought to become a frequent stop for me and others! Thanks for sharing! I really need to look into making more meals out on paper so I can have some quickies that won't take a lot of time to prepare on those hurried times.
