Do you cook anything special for St. Patrick's Day?

Spring Break starts, for me, on St. Patrick's day. But, I will be out of school days before. I'll probably start planning the Wednesday or Thursday before that. lol

I probably won't make anything special for the day. Maybe a batch of my Irish grandmother's scones for breakfast or rolls with dinner. To me, the day is not about corned beef and green beer.

Found this on the BH&G site, going to try these on St. Pat's day; don't know what else yet!


Sage Potato Rolls

1-1/2 cups buttermilk
2/3 cup water
1/4 cup sugar
2 tbsp margarine
1-1/2 tsp salt
3/4 cup instant mashed potato flakes
2 tbsp snipped fresh sage or 2 tsp dried sage, crushed
4-1/4 to 4 3/4 cups all purpose flour
2 pkgs active dry yeast


In a medium saucepan bring buttermilk, water, sugar, butter, and salt just to boiling. (Mixture may appear curdled.) Remove from heat. Stir in potato flakes; let stand until temperature is 120F to 130 degrees (about 15 minutes). Stir in snipped or dried sage. In a large mixing bowl stir together 1-1/2 cups of the all-purpose flour and the yeast. Add potato mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can. Turn out dough onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in a lightly greased bowl; turn once to grease the surface of dough. Cover and let rise in a warm place until double in size (45 to 60 minutes). Punch down dough. Turn out onto a lightly floured surface. Divide in half. Cover and let rest for 10 minutes. Grease 2 large baking sheets; set aside. Divide each half of the dough into 12 pieces. Shape pieces into balls. Arrange on prepared baking sheets about 2 inches apart. Loosely cover; let rise until nearly double in size (about 30 minutes). Bake rolls in a 350 degree oven about 12 minutes or until golden. Remove rolls from baking sheets; cool slightly on wire racks. Serve warm. Makes 24 rolls.

Happy St. Patricks Day


Nothing special here. We made cupcakes last night and put shamrock sprinkles on the top for decorations. Out of 24 cupcakes I think there are 6 left. I believe everyone took some for lunch today. I also think it was this mornings breakfast with coffee!!!!

Along with the Sage potato rolls we are having green eggs and low fat ham! (Scrambled egg whites tinted green),hash browns and lemon pie yogurt. That will be our St. Patrick's Day supper

Conan O'Briens's St. Patrick's Day Stew

2 cups diagonally cut sliced carrots
2 cups diagonally sliced parsnips
2 cups sliced onions
1 1/2 lb small white potatoes, each cut into quarters
salt and pepper
1 1/2 tsp dried thyme
2 lb boneless lamb stew meat
1 1/2 cup beef broth
4 cups plus 3 tbsp cold water
3 tbsp all purpose flour

Preheat oven to 350 degrees. In a heavy 6 quart Dutch oven spread half of vegetables and season with 1/4 tsp salt, 1/8 tsp pepper, and half of thyme. Top with meat then remaining vegetables. Season with 1/4 tsp salt, 1/8 tsp pepper, and remaining thyme. Add broth and 4 cups water. Cover and cook in oven 2 1/2 hours or till meat and vegetables are tender. Transfer meat and vegetables to a bowl and cover to keep warm. In a cup blemd flour with remaining water and stir into hot liquid in Dutch oven. Heat to boiling on top of range and boil 1 minute. Skim off fat and return meat and vegetables to Dutch oven. Serves 6

Bratwurst in Beer


2 tsp olive oil
1 large sweet onion, sliced into 1/4" rings
6 bratwurst
6 oz beer

Heat 1 teaspoon of olive oil in a Dutch oven. Brown bratwurst sausages till browned. Set aside. Add the remaining teaspoon of olive oil and the sweet onion rings to the pan. Toss the onions to coat with the oil. Cook stirring occasionally till the onions are golden but not brown. Return the bratwurst to the onions and add the beer. Cook over medium heat till the beer has cooked down to a syrup, about 12 to 15 minutes. Serve the bratwurst on buns. 6 servings

This is good with hot dogs or any other link style sausages.

Yeah the bratwurst are german, but its cooking it in the beer that qualifies it for St. Pat's Day; LOL I'm german so; okay we go a little on the far side to cook for St. Pat's Day! LOL

Apart from having a beer not much.
We do eat corned beef and mashed potatoes (put a little green food colouring in the mashed potatoes to make them green).
Just go green in general, we are Irish on both sides from way back (German and Polish to, so a right royal mix!)

Chef Mark, where does one buy Irish Stout beer in the US? I am not a beer drinker so this is something I am not familiar with. I am 100% Irish, but 'd rather have Irish other stuff than the beer.

DeBora, I know in the big city we shop in there is a liquor outlet of some sort and they carry all sorts of imported beers, so if you have one anywhere near you they might have it.



How about a Minted Sundae Soda for St. Pat's Day?

1 cup mint apply jelly OR 2 tsp bottled creme de menthe in place of jelly and water
1/2 cup water

lime sherbet
vanilla ice cream
7-Up,chilled

Combine the jelly and water in a pan. Cook and stir over a low heat till jelly dissolves. Cool and then chill. Into 14 oz glasses pour about 3 tbsp mint jelly syrup. Add a spoonful of sherber or ice cream and stir till melted. Add 1 scoop of vanilla ice cream and then a scoop of lime sherbet and another scoop of vanilla ice cream. Fill with the 7-Up by pouring carefully down the side of each glass. Garnish each with a lime slice.

DeBora:

Most liquor stores should carry it. If for some reason you can't find it you can substitute other beers. But I would look for something full flavored. Lite beers are out.

A couple of my faves: potatoes and cabbage!

Colcannon

2 lbs potatoes, peeled & cut into pieces
1 small cabbage, cored & chopped
2 small leeks, white parts only, sliced
1 cup skim milk
4 oz fat free cream cheese, softened
1 tsp white pepper

Boil potatoes in a large pot of water till tender about 20 to 25 minutes. In another pot boil cabbage aqbout 10 minutes till tender. Drain and cover and set aside. In a medium size pot simmer the leeks in milk about 5 minutes. When they are soft remove with a slotted spoon and put to one side, reserving the milk. When potatoes are tender drain them very well. Add half the milk that was used to simmer the leeks. Mash the potatoes till no lumps remain. Add cream cheese and white pepper then mash again till blended. Use remaining milk if needed. Stir in cabbage and leeks. Serve. Serves 6

This is a one pan Irish meal I found in a newspaper article in usa weekend. A very quick meal if you don't have time to make the corn beef!

2 - 1 1/2 pound racks of lamb, trimmed
salt and pepper
1 tsp sugar
2 tbsp olive oil
8 medium carrots, cut into large chunks
8 large peeled whole shallots
2 qts chicken broth
2 pounds fingerling potatoes OR small new potatoes
2 pounds cleaned spinach
Parsley Mint relish (recipe follows)

Set a heavy bottomed large roasting pan over two burners on low heat. Season lamb with the salt, pepper and sugar. A couple minutes before cooking turn burners on high for gas stoves OR medium for electric stoves. Add lamb when very hot and sear the meaty part of the bone side and rack up to sear the bottom about 1 minute per side. Trnasfer to a plate and setr aside. Turn off heat. Carefully pour off any lamb fat and wipe pan out with a paper towel. Turn heat to medium high and add olive oil to pan. Saute carrots and shallots till well browned, about 5 minutes. Add broth and potatoes and bring to a boil. Return lamb to pan and reduce heat to medium and cook covered with sheets of foil till vegetables are tender and the thickest part of the lamb registers 130 degrees on a meat thermometer, 15 to 18 minutes. Leave the broth in the pan and transfer the vegetables and lamb to a large platter and loosely cover with foil. Add spinach to simmering broth and cook till wilted but still bright green, 3 to 4 minutes and then add to platter. Carve meat into individual chops and pour any broth and spoon parsley mint relish over the meat and vegetables.

Parsley Mint Relish

1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
6 baby dill pickles, thinly sliced
1 tsp pickle juice
1/4 cup drained capers
2 green onions, thinly sliced
1/4 cup extra virgin olive oil
salt and pepper to taste

Mix all ingredients in a small bowl. Serves 8

Nope not much happens here for St Pats day, maybe an extra beer for the blokes and usual green mashed potatoes
