View Full Version : Old Fashioned Tomato Soup

Here is my so easy, so fast recipe for so good old fashioned tomato soup.

1 28 oz can whole tomatoes, undrained
1 1/4 (tomato) cans milk
1/2 tsp baking soda
2 T Butter
Salt
Pepper

First heat the tomatoes in a pot, using a potato masher to break them up. After they are warm, add the baking soda ... it will foam up and bubble ... don't be alarmed, it is reacting with the tomatoes' acid to neutralize it a bit so your milk won't curdle. After the tomatoes are hot, add your milk and butter. Salt and pepper to taste. That's about it. This makes about five servings. Can't be much easier than that and it just warms you to your toes. And wonderful with grilled cheese sandwiches.

P.S. ~ don't boil after you add the milk

Cat lover - How long would you cook fresh tomatoes to make this recipe?

Whenever I use "fresh" ingredients in a recipe I usually bring it to a boil(depending on the recipe; some you don't want to boil) and if I can't boil I cook it on low for quite awhile. I don't have a "set time"; I just cook whatever it is till they have the right "feel"; somewhat cooked through, but not mushy!

Do tomatoes reduce down like mushrooms?

No not really; they mush up some but no where anything like a mushroom. I usually just cube mine and they pretty much stay the same size.

Thanks kell and cat, I'm going to try this with fresh tomatoes instead of canned so I can avoid the extra sodium. But this definately woorks with my diet.

I don't know how much you have to watch the sodium, but you can get canned vegetables of all types with No Salt; it usually has it right on the label. Just thought I'd pass that onto you in case you didn't know. Even a "low cost" store like Sav-a-Lot carries a variety of them, at least that is where I get most of mine. Of course it will taste better with the fresh ingredients! Let us know how you like it!
